Blue Cheese, Spinach & Pumpkin Tartlets

  • 1 packet ready-made puff pastry
  • 100 g pumpkin (cubed)
  • 1 packet creamed spinach
  • 100 g blue cheese
  • nutmeg
  1. Preheat oven at 200°C

  2. Roast the pumpkin until soft and golden brown and slice

  3. Crumble the blue cheese into the creamed spinach and season with nutmeg

  4. Using a cup, cut out 8 rounds of puff pastry and gently mould into a non-stick muffin tin

  5. The pastry does not need to be pressed all the way into the tin

  6. Spoon the spinach and cheese mixture into the pastry and add slices of pumpkin

  7. Bake for 20 minutes or until golden

  8. Serve with a green salad or onion jam

Tip: Blue Cheese is generally strong in flavour, so avoid pairing with delicate or extremely elegant wines – they will simply be overpowered. Rather try a sweeter white wine.
