This is my favourite chicken, pork and fish marinade
Lemon and Herb Chicken/Pork/Fish
- Chicken/Pork/Fish (of your choice)
- 3 tbsp dried mint
- 1 tbsp dried sage
- 1 tbsp dried thyme
- 1 tbsp dried origamum ((oregano))
- Pinch salt
- ½ cup lemon juice
- ¼ cup olive oil
- 1 tsp lemon rind (finely chopped)

Preheat oven to 180°C

Mix all the ingredients in a bowl

Pour the lemon and herb mixture over the meat and brush the wet herbs onto each piece

Bake in an oven, or grill on a fire, until the meat is tender and cooked through
I’ve even made roast potatoes with this marinade
