This is my favourite chicken, pork and fish marinade

Lemon and Herb Chicken/Pork/Fish

  • Chicken/Pork/Fish (of your choice)
  • 3 tbsp dried mint
  • 1 tbsp dried sage
  • 1 tbsp dried thyme
  • 1 tbsp dried origamum ((oregano))
  • Pinch salt
  • ½ cup lemon juice
  • ¼ cup olive oil
  • 1 tsp lemon rind (finely chopped)
  1. Preheat oven to 180°C

  2. Mix all the ingredients in a bowl

  3. Pour the lemon and herb mixture over the meat and brush the wet herbs onto each piece

  4. Bake in an oven, or grill on a fire, until the meat is tender and cooked through

I’ve even made roast potatoes with this marinade
