Mama Jenn’s Granola Bars
Granola
- 8 cups rolled oats
- 2 cups almonds
- 1½ cups honey (or)
- 1½ cups brown sugar
- 16 tbsp butter
- ⅛ cup vegetable or canola oil (NOT OLIVE OIL (this is not necessary but helps brown the oats better))
Bar Toppings
- cranberry
- chocolate chips
- mini marshmallows ((marshmallow granola bars pictured))
Granola
-
Mix oats and nuts
-
Add the oil to the oats and stir well
-
In saucepan cook butter, honey/sugar until dissolved
-
Continue cooking 2 more minutes
-
Remove from heat and pour over oats
Bars
-
Preheat oven to 160°C
-
Spray your pans… bread pans work the best about 3″ X 5″ and divide the mix between them
-
Bake for 15 minutes
-
Bring them out one by one and use a coffee cup or similar item to PRESS the oats down
-
Do this every 15 minutes or so until its quite firm and appears to be browning on the edges
-
Even if they don’t look quite done, don’t cook for more than 30 minutes
-
They will harden as they cool.
-
Sprinkle topping and pressed down gently
-
Put the bars back in the oven till the chocolate or marshmallows have melted
