Pumpkin

  • 2 kgs pumpkin pieces
  • 250 g sugar
  • 1 egg
  • 620 ml flour
  • 10 ml baking powder
  • 1 ml salt
  • 500 ml milk

Syrup

  • 125 g butter
  • 250 ml golden syrup

Pumpkin

  1. Preheat the oven at 180°C

  2. Cook the pumpkin pieces and drain

  3. Spoon the punpkin into an oven proof dish

  4. Cream the butter and sugar

  5. Add the egg and beat until well blended

  6. Sift the dry ingredients and mix into the mixture

  7. Add the milk and mix until blended

  8. Pour the mixture over the pumpkin and bake for approximately 40 min, until its cooked through

Syrup

  1. Heat the butter and golden syrup

  2. Poor the syrup over the pumpkin

  3. Leave it to soak into the pumpkin

  4. Cut into squares and serve warm
