Recipe: Coleslaw

Coleslaw ½ large white or red cabbage (thinly sliced) 2 large carrots (washed and shredded) 2-3 tbsp plain low fat yoghurt 2 tsp vinegar ½ tsp sugar 1 tsp mustard Mix the cabbage and carrots

Coleslaw

  • ½ large white or red cabbage (thinly sliced)
  • 2 large carrots (washed and shredded)
  • 2-3 tbsp plain low fat yoghurt
  • 2 tsp vinegar
  • ½ tsp sugar
  • 1 tsp mustard
  1. Mix the cabbage and carrots in a bowl

  2. In a separate bowl, combine the yoghurt, vinegar, sugar and mustard and mix well

  3. Pour the yoghurt over the cabbage and carrots and mix until coated

Tip: Bulk this up using thinly sliced red pepper or even some broccoli, that way you’ll be adding some extra vitamins and minerals too.
