Roasted Cauliflower & Kidney Bean Salad with Rocket & Halumi
- 1 Cauliflower (cut into florets)
- 2 tbsp Olive Oil
- 1 pinch Lemon Pepper
- 1 cup Red Kidney Beans (cooked)
- 1 bunch Fresh Rocket
- 100 g Halumi Cheese (cut into small cubes)
- 1 Lemon (juiced)
- 4 tbsp Olive Oil

Preheated oven at 200ºC

Place cauliflower onto a baking tray, drizzle olive oil and lemon pepper

Bake for 10 minutes

Allow to cool

In a large bowl, combine rest of ingredients and toss salad well
