Roasted Butternut Salad with Feta & Chilli

  • 1 kg Butternut (peeled and cut into cubes)
  • 3 tbsp Olive Oil
  • 1 tsp Lemon Pepper
  • 200 g Feta (cut into cubes)
  • 2 bunch Coriander (chopped)
  • 3 Spring Onions (chopped)
  • 3 Red Chillies (finely sliced)
  1. Preheated oven at 200ºC

  2. Place butternut onto baking tray and drizzle with olive oil and lemon pepper

  3. Bake for 20 minutes until cooked

  4. Allow to cool.In a large bowl, combine all ingredients and toss salad
