Roasted Butternut Salad with Feta & Chilli
- 1 kg Butternut (peeled and cut into cubes)
- 3 tbsp Olive Oil
- 1 tsp Lemon Pepper
- 200 g Feta (cut into cubes)
- 2 bunch Coriander (chopped)
- 3 Spring Onions (chopped)
- 3 Red Chillies (finely sliced)

Preheated oven at 200ºC

Place butternut onto baking tray and drizzle with olive oil and lemon pepper

Bake for 20 minutes until cooked
