Broccoli & Cheddar Soup

  • 1 Leek (washed and chopped)
  • 2 tbs Olive Oil
  • 500 g Frozen Broccoli
  • 750 ml Water
  • 1 tsp Dried Thyme
  • 100 g Cheddar (grated)
  • 2 Spring Onions (finely chopped)
  1. In a pot, lightly fry the leeks in olive oil until leeks are soft

  2. Add frozen broccoli, water and thyme and bring to the boil, simmer until broccoli has soften

  3. Using a hand blender, puree soup until smooth

  4. Add cheese and stir until cheese is mixed in

  5. Add spring onions just before serving

  6. Garnish with grated cheese and finely chopped spring onion
