Broccoli & Cheddar Soup
- 1 Leek (washed and chopped)
- 2 tbs Olive Oil
- 500 g Frozen Broccoli
- 750 ml Water
- 1 tsp Dried Thyme
- 100 g Cheddar (grated)
- 2 Spring Onions (finely chopped)

In a pot, lightly fry the leeks in olive oil until leeks are soft

Add frozen broccoli, water and thyme and bring to the boil, simmer until broccoli has soften

Using a hand blender, puree soup until smooth

Add cheese and stir until cheese is mixed in

Add spring onions just before serving

Garnish with grated cheese and finely chopped spring onion
