Since being diagnosed with T2D, I’ve been looking for Type 2 Diabetes Recipes for bread. All I have wanted is a sandwich and that is something I just haven’t been able to have… until now! I have found that there are few diabetic branded items available that aren’t stuffed full of nasty sweeteners and/or preservatives. So making my own bread has become a necessity.
I found this great Seed Meal Loaf recipe from The Low Carb Diabetic. Be sure to visit the site for more amazing recipes.
Type 2 Diabetes Recipes ~ Seed Meal Loaf
- 2 cups (280 grams) flax seeds (ground)
- 5 eggs
- ½ cup water
- ⅓ cup liquid butter (I use sunflower oil)
- 1 tbsp baking powder
- 1 tsp salt
- handful Added mixed dried herbs (I substituted these with a mix of seeds)

Preheat the oven at gas mark 7 or electric fan oven 200*C

Place the eggs in a mixing bowl and whisk

Add the butter and water

Place the flax in another bowl and add baking powder, salt and herbs and mix

Add the wet mix to the dry mix and mix thoroughly

Place the mix into a non stick bread tin and bake for 55 minutes

All ovens are different, so you will have to experiment a bit
Add some walnuts and sun dried toms into the mix and you have meal in itself
Just add that lovely butter
The beauty of this bread is that it is easy to make, and requires no cooking skills or special equipment
