Mick’s Sweet Muffins

Recipe adapted by Monique Carroll

  • 500 g premix muffin mix
  • 2 cups milk
  • 3 eggs
  • ½ cup blueberries (crushed)
  • ½ cup raspberries (crushed)
  • 2 bananas (mashed)
  • 200 ml strawberry yoghurt
  • 60 ml oil
  • 1 heaped tbsp flour
  • 1 heaped tsp baking powder
  1. Preheat oven to 140°C

  2. Mix all the ingredients together

  3. Spoon into prepared muffin pans

  4. Bake for 40 minutes or until cooked through

You can also add a handful of pumpkin, flax, sunflower seeds
