Lani’s Pumpkin Soup

  • 30 ml oil
  • 4 large leeks (sliced)
  • 250 g pumpkin (cubed)
  • 1 onion (finely chopped)
  • 30 ml flour
  • Salt & pepper
  • 2 medium potatoes (thinly sliced)
  • 500 ml chicken stock
  • 500 ml milk
  • 125 ml cream
  1. Heat oil in saucepan

  2. Add leeks, pumpkin & onion

  3. Sprinkle flour and fry gently for 10 mins or until soft – not browned

  4. Add salt, pepper & potatoes, and stock

  5. Blend in milk

  6. Cover & bring to boil

  7. Reduce heat and simmer for 15-20 mins or until veggies are tender

  8. Liquidize or pass thru a sieve

  9. Stir in cream
