Recipe: Lani’s Pumpkin Soup

Lani’s Pumpkin Soup

Ingredients

  • 30 ml oil
  • 4 large leeks sliced
  • 250 g pumpkin cubed
  • 1 onion finely chopped
  • 30 ml flour
  • Salt & pepper
  • 2 medium potatoes thinly sliced
  • 500 ml chicken stock
  • 500 ml milk
  • 125 ml cream

Instructions

  • Heat oil in saucepan
  • Add leeks, pumpkin & onion
  • Sprinkle flour and fry gently for 10 mins or until soft – not browned
  • Add salt, pepper & potatoes, and stock
  • Blend in milk
  • Cover & bring to boil
  • Reduce heat and simmer for 15-20 mins or until veggies are tender
  • Liquidize or pass thru a sieve
  • Stir in cream
