Lani’s Pumpkin Soup
- 30 ml oil
- 4 large leeks (sliced)
- 250 g pumpkin (cubed)
- 1 onion (finely chopped)
- 30 ml flour
- Salt & pepper
- 2 medium potatoes (thinly sliced)
- 500 ml chicken stock
- 500 ml milk
- 125 ml cream

Heat oil in saucepan
-
Add leeks, pumpkin & onion
-
Sprinkle flour and fry gently for 10 mins or until soft – not browned

Add salt, pepper & potatoes, and stock
-
Blend in milk
-
Cover & bring to boil
-
Reduce heat and simmer for 15-20 mins or until veggies are tender

Liquidize or pass thru a sieve

Stir in cream
