Recipe: Rich Tomato Sugo (for use on pizza as base topping)

Rich Tomato Sugo (for use on pizza as base topping) For 2 x 25cm (10in) pizzas 2×400 g cans plum tomatoes salt and freshly ground black pepper 2 tsp sugar 1 tsp mixed dried herbs

Rich Tomato Sugo (for use on pizza as base topping)

For 2 x 25cm (10in) pizzas

  • 2×400 g cans plum tomatoes
  • salt and freshly ground black pepper
  • 2 tsp sugar
  • 1 tsp mixed dried herbs
  • 2 cloves garlic (crushed)
  1. Tip the canned tomatoes into a small, heave-based saucepan

  2. Season well with salt and pepper

  3. Stir in the sugar, dried herbs (try oregano, rosemary and thyme) and the garlic

  4. Mix well and bring to the boil

  5. Reduce the heat to barely a simmer, cover the pan and cook over gentle heat for 30 minutes

  6. Take off the lid and simmer for another 15 minutes until really thick

  7. Rub through a sieve if you like

Note: I use a food processor to get it fine
