Recipe: Chocolate Cake

Chocolate Cake

  • 2 cups sugar
  • 6 eggs
  • 2 cups cake flour
  • 3 tsp baking powder
  • pinch salt
  • ½ cup oil
  • ½ cup milk
  • ½ cup water
  • 3 tsp cocoa

Syrup

  • 2 cups sugar
  • 2 cups water
  • 3 tsp coffee
  • dash brandy (½ cup if stronger taste of brandy is wanted)

Topping 

  • 2 packets orly whip (1 box)
  • 2 tsp sugar
  • 1 tin caramel treat (I like using the mint flavoured caramel treat)
  • 1 bar peppermint crisp (crumbled)

Chocolate Cake

  1. Preheat the oven to 180˚C

  2. Beat eggs & sugar until creamy

  3. Sift all dry ingredients together

  4. Bring water, milk & oil to the boil

  5. Fold egg mixture into dry ingredients, add milk mixture

  6. Mix well & bake for 25-30 mins

Syrup

  1. Cook for 5 mins

  2. Pout over cake, allow to cool

Topping 

  1. Whip the cream & sugar till stiff, add caramel & mix well

  2. Spread over cake & decorate with peppermint crisp
