30 Day Muffins

This mixture can be stored in a fridge for 30 days before baking

  • ½ cup oil
  • 1½ cup brown sugar
  • 2 cups milk
  • 1 cup mixed seeds (sunflower, pumpkin, sesame)
  • 1 cup nutty wheat flour (`)
  • 1½ cup cake flour
  • 2 cups digestive bran
  • 2 eggs
  • 1 tsp vanilla
  • 2 tsp bicarbonate of soda
  • 1 pinch salt
  • 1 cup chopped nuts (any but I prefer pecan)
  1. Beat eggs, oil & sugar

  2. Add all the dry ingredients with the milk

  3. Place in a sealed container overnight

  4. Preheat oven to 180°C

  5. Spoon the batter into prepared muffin pans

  6. Bake in muffin pan for 10-15mins baking.
