Chicken Burger with Melted Brie & Caramelised Onions

  • 2 fresh skinless chicken breast fillets
  • 4 slices thick gypsy ham
  • 4 slices brie
  • 2 ciabatta rolls (sliced or gluten free rolls)
  • 1 red onion (sliced)
  • olive oil
  • butter (for frying)
  • 1 tsp brown sugar
  • Fresh rocket
  • Seasoning (to taste)
  1. Saute the red onions in butter, oil and brown sugar over a low heat for about 15 minutes until soft and sweet

  2. Season

  3. Grill the chicken breasts for approximately 5 minutes on each side or until done

  4. At the last minute, add a thick slice of ham and Brie

  5. Grill until the cheese is melted

  6. Serve on an open ciabatta roll with fresh rocket and topped with sauteed onions
