Chicken Burger with Melted Brie & Caramelised Onions
- 2 fresh skinless chicken breast fillets
- 4 slices thick gypsy ham
- 4 slices brie
- 2 ciabatta rolls (sliced or gluten free rolls)
- 1 red onion (sliced)
- olive oil
- butter (for frying)
- 1 tsp brown sugar
- Fresh rocket
- Seasoning (to taste)

Saute the red onions in butter, oil and brown sugar over a low heat for about 15 minutes until soft and sweet

Grill the chicken breasts for approximately 5 minutes on each side or until done

At the last minute, add a thick slice of ham and Brie

Grill until the cheese is melted

Serve on an open ciabatta roll with fresh rocket and topped with sauteed onions
