Baked Ricotta Topped with Caramalized Sliced apples
Baked Ricotta
- 1 kg Ricotta
- 2 tbsp caster sugar
- 1 cup Fresh cream
- ¼ cup preserved ginger or fresh ginger if prefered (finely diced )
- 1 cup almonds (roughly chopped and toasted)
- 1 egg (beaten)
- 1 level tsp ground cinnamon
- 60 ml Honey liquor (optional)
- Honey (drizzling)
Caramelized Apples
- 2 whole apples (such as gala or granny smith)
- 2 tbsp unsalted butter
- 3 tbsp brown sugar
- pinch cinnamon (optional)
Baked Ricotta

Pre-heat oven 180°C

Mix together the ricotta with the fresh cream, sultana, preserved ginger, nuts, egg and cinnamon and liquor

Shape into a log, place onto a buttered baking tray and drizzle with honey or spoon into an oven dish and bake

Bake the log till it is set and the honey is bubbling about 10-15 minutes

Serve topped with the caramelized apples
Caramelized Apples

Peel the apples and then cut each apple into quarters

Slice each quarter into 4 pieces

Melt the butter over medium-high heat
-
Once the butter has almost melted, add the brown sugar, followed by the apples

Cook and toss the apples a few times until they are nicely caramelized on all sides
Note: You can also add a pinch of cinnamon to the apples, if desired.
