Brandy Snap Biscuits

  • 200 g White Sugar
  • 200 g Syrup
  • 200 g Butter
  • 200 g Flour
  1. Place sugar, syrup and butter in a pan and boil until light brown in colour

  2. Remove from the heat and add flour, mixing constantly

  3. Place back on the heat and cook for 2 mins

  4. Remove and allow to cool

  5. Spread the mixture on a well oiled oven tray in rounds of 4cm

  6. Bake in the oven at 200°C for 5mins

  7. Remove from the baking tray and allow to cool

  8. Tower the ice cream between the biscuits or crumble them over the ice cream
