Recipe: Apple & Raisin Rosti

Apple & Raisin Rosti 2 Granny Smith Apples 2 Starking Apples 3 tbsp Flour 5 ml Cornflour 2 Eggs 250 ml Water 50 ml Buttermilk 30 ml Lemon Juice 100 ml Apple Juice 100 g

Apple & Raisin Rosti

  • 2 Granny Smith Apples
  • 2 Starking Apples
  • 3 tbsp Flour
  • 5 ml Cornflour
  • 2 Eggs
  • 250 ml Water
  • 50 ml Buttermilk
  • 30 ml Lemon Juice
  • 100 ml Apple Juice
  • 100 g Raisins
  • 100 g Sultanas
  • 100 g Mixed Peel
  1. Preheat oven at 180°C

  2. Leaving the skin on grate the apples

  3. Place in a bowl with the apple and lemon juice

  4. Place the mixed peel, sultanas and raisins in boiling water for 15 mins

  5. Remove and save the water

  6. Drain all the juice from the grated apple and mix with the water from the sultanas

  7. Mix the rest of the ingredients with the apple except the cornflower

  8. Mix this properly and shape into little 6 cm patties

  9. Over medium heat melt some butter in a frying pan and slightly brown the apple rostis, place on a baking sheet and bake in the oven for 15 mins

  10. Place all the juice in a sauce pan and reduce, thicken with cornflower

  11. Serve rostis warm with vanilla ice cream

For a sugar spike decoration melt 1 cup of sugar in 2 cups of water. Cook without stirring until sugar turns brown take off heat immediately and put into a basin of cold water to stop it from cooking. Drizzle with a spoon to form lines on an oiled baking sheet. Once it has cooled and hardened, break into spikes.

Be careful when cooking with hot sugar as it can burn.
