Olive Ciabatta Bruschetta with Spicy Baby Marrow Relish & Kidney Bean Humus

  • 1 loaf olive ciabatta
  • 3 tbs olive oil
  • pinch lemon pepper
  1. Preheat oven at 180ºC

  2. Slice the bread into thin slices, brush with olive oil and season with lemon pepper

  3. Bake until golden brown


Spicy Baby Marrow Relish

  • 3 spring onions (finely chopped)
  • 250 g baby marrows (sliced)
  • 1 tsp chillies (finely chopped)
  • 1 bunch coriander (chopped)
  • ½ lemon (zest and juice)
  • 3 tbsp olive oil
  1. Fry spring onions and chillies in a little olive oil until soft

  2. Add baby marrows and cook for 5 minutes until baby marrows have softened

  3. Add coriander, lemon juice and olive oil, season to taste and serve


Kidney Bean Humus

  • 2 cups white kidney beans (cooked)
  • 1 tsp chillies
  • 2 lemons (juice only)
  • 100 ml olive oil
  • 1 tsp lemon pepper
  1. Using a food processor, combine all ingredients and blend until smooth, season to taste and serve
