Butternut, Feta & Spinach Slice

Vegetarian food has never tasted so good!

  • 500 g butternut (peeled and sliced)
  • 250 ml cherry tomatoes (halved)
  • 1 red onion (cut into wedges)
  • olive oil
  • salt and milled pepper
  • 2 rolls puff pastry (thawed)
  • 75 g baby spinach
  • 150 g diced feta cheese
  • 1 egg (beaten)
  1. Preheat the oven to 200ºC

  2. Place butternut, tomatoes and onions on a baking tray

  3. Toss with a glug of olive oil and season to taste

  4. Roast vegetables for 20-25 minutes or until butternut is tender

  5. Set aside to cool completely

  6. Place a sheet of pastry on a greased baking tray and top with cooled roasted vegetables, feta and spinach, leaving a 2 cm border along each side

  7. Brush border with water and top with a second layer of pastry

  8. Crimp with a fork

  9. Make a hole in centre of pastry for steam

  10. Bake for 30 minutes or until golden
