Spicy Pear, Nut & Cinnamon Pudding
Bring some health into your puddings with seasonal blueberries
- 60 ml butter
- 125 ml brown sugar
- 5 ml vanilla extract
- 1 extra large egg
- 250 ml pear or apple (freshly grated)
- 80 ml fruit mince
- 30 g walnuts (chopped)
- 180 ml nutty wheat flour
- 5 ml baking powder
- 5 ml ground cinnamon
- 60 ml milk
Sauce
- 125 ml brown sugar
- 250 ml boiling water

Preheat oven to 180°C

Grease a 25 cm baking dish

Cream butter, sugar and vanilla with electric beater until pale and fluffy

Add egg beat and well

Stir through pear or apple, fruit mince and walnuts

Mix remaining dry ingredients and fold into creamed mixture

Stir through milk and pour batter into baking dish

Sprinkle with brown sugar and pour over water

Bake for 15-20 minutes for individual portions, or a little longer for a large pudding
