Changing eating habits after being diagnosed with Type 2 Diabetes (T2D) is harder than I thought it would be. I generally found eating a chore and when I did eat, I’d stuff my face until I felt sick. Now, I have to eat 3 balanced meals a day. What the heck am I supposed to eat now? I really don’t want to live on salads and chicken breasts for the rest of my life!!! All I want to eat is a blasted sandwich!!!!
For 2 weeks I’ve eaten nothing but salads and stir fries with a side of chicken breast (we don’t eat fish). I have not been experiencing any craving for carbs, to my amazement. What I have been struggling with is the fact that every meal needs to be prepared. There’s no run to the kitchen and grab something quick before you leave. Everything needs to be prepared. I need to start prepping all our (The Hubby has joined me) lunches on a Sunday and having them ready to go for quick meals during the week. Especially now that The Hubby is no longer going to be working from home.
The Good News
Since starting to eat healthier, I have lost 7 kgs. That’s in a little over 3 weeks. I don’t want to loose weight to fast and not be able to maintain the weight loss. I want to change my lifestyle. Change the way I view food and teach my children that eating correctly, with the correct portion sizes, is important.
The Not So Good News
Last week I decided that since I’d been so good with my eating habits, that I’d treat myself with a flavoured water. This was a terribly bad idea. Terribly, terribly bad. I was man down. I had a migraine for the first time since I had started my medication. The sugar in the drink spiked my insulin right up and as a result I was practically bed ridden for that night. It was awful. I never want to feel like that again. I cannot believe that I felt like that for 10 years, day in and day out. That was the eye opening I desperately needed. I won’t be making that mistake again.
