Recipe: Peanut Butter Biscuits

Peanut Butter Biscuits ½ cup peanut butter (smooth or crunchy) 125 g butter or margarine ½ cup white sugar ½ cup sticky brown sugar ½ ts[ vanilla essence 1 extra large egg 1¼ cup cake

Peanut Butter Biscuits

  • ½ cup peanut butter (smooth or crunchy)
  • 125 g butter or margarine
  • ½ cup white sugar
  • ½ cup sticky brown sugar
  • ½ ts[ vanilla essence
  • 1 extra large egg
  • 1¼ cup cake flour
  • ½ tsp baking powder
  • ½ tsp bicarbonate of soda
  • ¼ tsp salt
  1. Pre-heat oven to 180°C

  2. Using a hand held electric beater or if you prefer a wooden spoon (the wooden spoon just takes a bit longer) beat the peanut butter, butter or margarine, white sugar and sticky brown sugar together

  3. Still using your beater add the vanilla essence and egg (no need to beat the egg separately, just plop it into the bowl)

  4. Mix in the cake flour, baking powder, bicarbonate of soda and salt

  5. Tip it out of the mixing bowl and wrap the dough in plastic cling wrap

  6. Put it in the fridge to stiffen up a bit for 30 minutes

  7. Take the dough out of the fridge and make balls of it, I usually do walnut sized, onto a baking tray

  8. Press down with a fork either dipped in flour or sugar

  9. To make crispy cookies, push down quite hard making a thin biscuit. For chewy peanut butter biscuits, push down lightly, thicker peanut butter cookies are more chewy when baked

  10. Bake for about 8 – 12 minutes until the biscuit that is slightly brown along the edges

  11. Once they come out of the oven put them on a wire rack straight away to cool

  12. Allow to cool

If you don’t have sticky brown sugar then substitute with white sugar.  The biscuits taste pretty much the same.
