Ginger Biscuits
- 225 g flour
- 2 tsp ground ginger
- 2 tsp baking powder
- 100 g margarine
- 100 g sugar
- ½ tsp bicarbonate of soda (baking soda) (dissolved in 1 tsp hot water)
- 2 tbsp golden syrup ((substitute light corn syrup), warmed)

Sift the flour, ginger and baking powder into a bowl

Rub in the margarine

Add the sugar, then mix to a dough with the bicarbonate of soda mixture and syrup

Roll the mixture into walnut-sized balls and place them on greased baking sheets

Press down the centre of each ball with your thumb

Bake in a preheated moderately hot oven 200°C for about 10 minutes
