Easy Fruit Cake

  • 150 g self-raising flour
  • 150 g nutty flour (or wholewheat flour)
  • 225 g butter
  • 225 g caramel sugar
  • 1 rind lemon (grated)
  • 5 eggs
  • 450 g mixed cake fruit
  • 125 g glacé cherries
  • 25 ml golden syrup
  1. Preheat oven at 160°C

  2. Cream the butter, sugar and grated rind together

  3. Add the eggs, one at a time, beating well, after each addition

  4. Add the syrup

  5. Combine the self-raising flour and the nutty or wholewheat flour

  6. Cut the cherries in quarters and add, along with the cake fruit, to the flour

  7. Add to the creamed mixture

  8. Mix well

  9. Spoon the mixture into a deep 23 cm round cake tin and bake for 2–2 ½ hours
