Recipe: Avocado Bread

Avocado Bread

  • 60 g butter
  • 125 ml sugar
  • 375 ml flour (sifted)
  • 1 ripe avocado (mashed)
  • 2 ml baking soda (bicarb)
  • 10 ml milk
  • 1 egg (beaten)
  • 10 ml lemon juice
  1. Preheat oven to 180°C

  2. Grease bread tin

  3. Cream the butter and sugar in a large mixing bowl

  4. Mix the bicarb and milk together in a separate container

  5. Add the mashed avocado and bicarb mixture to the creamed butter/sugar mixture

  6. Fold the flour and baking powder into the avocado mixture and add the lemon juice

  7. Place the mixture into the bread tin and bake for 45 min or until cooked through
