Recipe: Bacon and spinach muffins

Bacon & Spinach Muffins 125 g rindless bacon (streaky, chopped) 214 g cake flour 2 tsp baking powder 1 tsp salt 1 pinch cayenne pepper 1 cup spinach (cooked, chopped) 1 cup cheddar cheese (grated)

Bacon & Spinach Muffins

  • 125 g rindless bacon (streaky, chopped)
  • 214 g cake flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 pinch cayenne pepper
  • 1 cup spinach (cooked, chopped)
  • 1 cup cheddar cheese (grated)
  • 1 egg
  • 80 ml cooking oil
  • 100 ml milk
  1. Pre-heat the oven to 200ºC

  2. Grease a muffin tin

  3. Fry the bacon in some oil until just cooked and slightly cripsy and set aside

  4. Sift the flour, baking powder, salt and cayenne pepper together

  5. Add the bacon, spinach and cheese.In a separate bowl, whisk together the egg, oil and milk and add to the dry ingredients

  6. Mix until the flour is moistened – the batter should still be lumpy

  7. Spoon into the greased muffin tins, filling each mould ⅔ full

  8. Bake for 15-20 minutes or until golden brown

  9. Serve warm with butter
