Recipe: Buttermilk Scones

Buttermilk Scones 3 cups Flour ⅓ cup Sugar 2½ tsp Baking Powder ¾ tsp Salt 150 g Butter 1 cup Buttermilk ½ tsp Baking soda (bicarbonate of soda) Glaze 1 tbsp Cream ¼ tsp Cinnamon

Buttermilk Scones

  • 3 cups Flour
  • ⅓ cup Sugar
  • 2½ tsp Baking Powder
  • ¾ tsp Salt
  • 150 g Butter
  • 1 cup Buttermilk
  • ½ tsp Baking soda (bicarbonate of soda)

Glaze

  • 1 tbsp Cream
  • ¼ tsp Cinnamon
  • 2 tbsp Sugar
  1. Preheat the oven to 200ºC

  2. Use ungreased baking sheet

  3. Combine the flour, sugar, baking powder, baking soda and salt into a mixing bowl

  4. Stir well with a fork and aerate

  5. Add the butter and cut into the flour mixture, using a pastry blender or two knives, or work in, using your fingertips, until the mixture looks like bread crumbs

  6. Add the buttermilk

  7. Mix only until the mixture looks like fresh bread crumbs

  8. Gather the dough into a ball and press so it holds together

  9. Turn the dough out onto a lightly floured surface

  10. Knead lightly 12 Times.Pat the dough into a circle ½ inch thick

  11. Brush the dough with the glaze

  12. Cut the dough into 18 pie shaped pieces

  13. Place the scones 1 inch apart on the baking sheet

  14. Bake for about 12mins or until the tops are brown

  15. Can be served hot or cold

Glaze

  1. In a small bowl combine the cream, cinnamon and sugar, stir to blend

If desired you can also add currants and grated orange rind to the mixture
