Serve chops with peanut sauce and a fresh vegetable stir-fry. For a child-friendly version, omit the chilli and coriander and serve with fries.
Quick Pork Chops with Peanut Sauce
- 4 – 6 pork loin chops
- juice and grated peel of 1 lemon
- 15 ml brown sugar
- 125 ml crunchy peanut butter
- 125 ml coconut milk
- 15 ml soy sauce
- 5 ml chili flakes
- 10 ml ground coriander
- 15 ml oil
- salt and pepper (to taste)

Mix lemon juice, peel and sugar together

Stir over medium heat, with peanut butter, coconut milk, soy sauce, chilli and coriander

Simmer for about 3 – 5 minutes, or until thickened

Heat oil in a non-stick pan

Cook pork chops for about 7 – 8 minutes on both sides, or until golden

Season with salt and pepper

Serve with peanut sauce and fresh vegetable stir-fry or fries
