Quick Pork Chops with Peanut Sauce

Ingredients

  • 4 – 6 pork loin chops
  • juice and grated peel of 1 lemon
  • 15 ml brown sugar
  • 125 ml crunchy peanut butter
  • 125 ml coconut milk
  • 15 ml soy sauce
  • 5 ml chili flakes
  • 10 ml ground coriander
  • 15 ml oil
  • salt and pepper to taste

Instructions

  • Mix lemon juice, peel and sugar together
  • Stir over medium heat, with peanut butter, coconut milk, soy sauce, chilli and coriander
  • Simmer for about 3 – 5 minutes, or until thickened
  • Heat oil in a non-stick pan
  • Cook pork chops for about 7 – 8 minutes on both sides, or until golden
  • Season with salt and pepper
  • Serve with peanut sauce and fresh vegetable stir-fry or fries
