Serve chops with peanut sauce and a fresh vegetable stir-fry. For a child-friendly version, omit the chilli and coriander and serve with fries.

Quick Pork Chops with Peanut Sauce

  • 4 – 6 pork loin chops
  • juice and grated peel of 1 lemon
  • 15 ml brown sugar
  • 125 ml crunchy peanut butter
  • 125 ml coconut milk
  • 15 ml soy sauce
  • 5 ml chili flakes
  • 10 ml ground coriander
  • 15 ml oil
  • salt and pepper (to taste)
  1. Mix lemon juice, peel and sugar together

  2. Stir over medium heat, with peanut butter, coconut milk, soy sauce, chilli and coriander

  3. Simmer for about 3 – 5 minutes, or until thickened

  4. Heat oil in a non-stick pan

  5. Cook pork chops for about 7 – 8 minutes on both sides, or until golden

  6. Season with salt and pepper

  7. Serve with peanut sauce and fresh vegetable stir-fry or fries
