Recipe: Beef Stew

Beef Stew

Freezer meal. Makes 3 dishes which serve 4. Stores well for 4 weeks.

  • 2 tbsp coconut oil
  • 1 medium onion (diced)
  • 1 tbsp dried thyme
  • 1.5 kgs beef cubes
  • 3 tbsp cornflour
  • 10 baby potatoes (quartered)
  • 1 kgs mixed vegetables (I use a pea, corn and baby carrot mix)
  • 1 sachet brown onion soup
  1. In a heavy bottom pan, fry the onions, in half the oil, till translucent

  2. Add the thyme and fry until fragrant

  3. Place the fried onions in the bottom of the slow cooker

  4. Coat the beef cubes with the corn flour

  5. Fry the beef cubes in the remaining oil until browned

  6. Place the meat on top of the onion and thyme

  7. Add the potatoes and then the vegetables to the pot

  8. In the pan, place the water and bring to the boil

  9. This will loosen the caramelized onion, thyme and cornflour

  10. Remove the pan from the heat

  11. Mix the brown onion soup into the water and pour over the vegetables, ensuring that all the food is just covered

  12. Cook on low for 12 hours, or until the potatoes are soft

  13. Cool and decant into oven and freezer proof containers

To Eat

  1. Defrost (thaw) in the fridge

  2. Place contents in a pot and simmer until warmed through

  3. Serve with rice and a side salad
