Beef Stew

Freezer meal. Makes 3 dishes which serve 4. Stores well for 4 weeks.

Ingredients

  • 2 tbsp coconut oil
  • 1 medium onion diced
  • 1 tbsp dried thyme
  • 1.5 kgs beef cubes
  • 3 tbsp cornflour
  • 10 baby potatoes quartered
  • 1 kgs mixed vegetables I use a pea, corn and baby carrot mix
  • 1 sachet brown onion soup

Instructions

  • In a heavy bottom pan, fry the onions, in half the oil, till translucent
  • Add the thyme and fry until fragrant
  • Place the fried onions in the bottom of the slow cooker
  • Coat the beef cubes with the corn flour
  • Fry the beef cubes in the remaining oil until browned
  • Place the meat on top of the onion and thyme
  • Add the potatoes and then the vegetables to the pot
  • In the pan, place the water and bring to the boil
  • This will loosen the caramelized onion, thyme and cornflour
  • Remove the pan from the heat
  • Mix the brown onion soup into the water and pour over the vegetables, ensuring that all the food is just covered
  • Cook on low for 12 hours, or until the potatoes are soft
  • Cool and decant into oven and freezer proof containers

To Eat

  • Defrost (thaw) in the fridge
  • Place contents in a pot and simmer until warmed through
  • Serve with rice and a side salad
