Recipe: Easy Carrot Cake Recipe in Less than an Hour PLUS Carrot Cake Frosting

Easy Carrot Cake 1 cup castor sugar 1 cup plain flour 1½ cups carrots (grated ) 2 eggs ½ cup olive oil ½ tsp bicarbonate of soda ½ tsp baking powder 1 tsp cinnamon powder

Easy Carrot Cake

  • 1 cup castor sugar
  • 1 cup plain flour
  • 1½ cups carrots (grated )
  • 2 eggs
  • ½ cup olive oil
  • ½ tsp bicarbonate of soda
  • ½ tsp baking powder
  • 1 tsp cinnamon powder
  1. Preheat oven to 180°C

  2. Line a standard loaf tin or oblong cake tin with baking paper

  3. Place all ingredients into a bowl and beat well

  4. Pour mixture into cake tin

  5. Bake for approximately 45 minutes until a skewer inserted into the cake comes out clean

  6. Remove the cake from oven and allow to cool

  7. Turn cake onto a wire rack and allow to cool completely before icing

Note: Use ½ cup self-raising flour and ½ cup plain flour if necessary


Carrot Cake Frosting

  • 25 g low fat margarine
  • 25 g cream cheese
  • 15 ml lemon juice
  • icing sugar (to taste)
  • 1 rind lemon (finely grated)
  1. Mix margarine, cream cheese, lemon juice and icing sugar

  2. Decorate with lemon rind
