Recipe: Festive Fruit Cake

Festive Fruit Cake

  • 500 ml fruit cake mix
  • 125 ml glacé cherries (halved)
  • 62 ml brandy
  • 125 g butter (room temperature)
  • 125 ml sugar
  • 4 extra large eggs
  • 500 ml cake flour
  • 5 ml baking powder
  • 5 ml mixed spice
  • 10 ml cinnamon
  • 5 ml ginger
  • 10 ml bicarbonate of soda
  • 250 ml milk
  • 62 ml molasses
  1. Soak the cake mix and cherries in the brandy overnight

  2. Preheat oven at 160ºC

  3. Cream butter and sugar together and add eggs one at a time, beating well after each addition until light and fluffy

  4. Sift the flour, baking powder and spices together and fold into the creamed mixture

  5. Dissolve the bicarbonate of soda in the milk and add to creamed mixture along with the molasses

  6. Add the fruit and mix well

  7. Spoon the mixture into a deep greased and lined 22 cm tin and bake for 1 hour or until a skewer comes out clean

  8. Decorate with blanched almonds and glacé fruit if desired
