Roast Beef with a Pecorino, Mustard & Rosemary Crust

  • 1 topside or silverside cut of beef

Crust

  • 30 ml pecorino (grated)
  • 60 ml wholegrain mustard
  • 2 cloves garlic (crushed)
  • 30 ml breadcrumbs (toasted)
  • 60 ml rosemary (chopped)
  1. Preheat the oven to 200°C

Crust

  1. Combine all crust ingredients and season

  2. Gently pack the crust over the top of the beef, patting down to ensure that it is secure

  3. Roast until done to your liking
