Recipe: Panna Cotta with Grappa & Strawberries

Panna Cotta with Grappa & Strawberries

  • 1 Cream
  • 200 ml Espresso
  • 5 leaves Gelatin
  • 100 ml Milk
  • 150 g Castor Sugar
  • 120 ml Brandy
  • 3 punnets Strawberries
  • 500 ml Grappa
  1. Bring the cream, espresso and sugar to just before boiling point

  2. DON'T LET IT BOIL

  3. Soften and dissolve the gelatin leaves in the cold milk

  4. Add brandy and pour through a sieve into the hot cream

  5. Gently mix all the ingredients together and pour into moulds or martini glasses

  6. Place in the fridge to set overnight

  7. Serve with a bowl off chilled strawberries and generously splashed with grappa

Grappa can be replaced with your favourite liqueur, whiskey or brandy.

To decorate the top, dust it with cocoa, then icing sugar through a colander to create a white “dot” effect
