Buffalo Wings with Hot Sauce

  • 12 Chicken wings

Marinade

  • 2 Chillis (finely chopped)
  • 1 lemon (juice)
  • 1 pinch Lemon Pepper (I like the Ina Paarmans brand)
  • 2 tbsp Olive Oil
  • ½ cup Flour
  1. In a large bowl add chicken wings, chillies, lemon juice, lemon pepper and olive oil

  2. Marinate for 2 hours

  3. Remove chicken wings from marinade and dust with seasoned flour and deep fry until golden brown and crispy

  4. Drain excess oil on paper towel and serve

  5. Serve with hot sauce and Pecorino dressing.


Pecorino Dressing

  • 100 g Pecorino Cheese (finely grated)
  • 2 Lemons (zest and juice)
  • ½ cup Olive Oil
  • 1 bunch Parsley (finely chopped)
  • 1 pinch Lemon pepper
  1. Using a blender, combine cheese, lemon zest and juice, olive oil and lemon pepper

  2. Blend until smooth

  3. Add the parsley

  4. Season to taste and serve
