Broccoli & Cheddar Soup


  • 1 Leek washed and chopped
  • 2 tbs Olive Oil
  • 500 g Frozen Broccoli
  • 750 ml Water
  • 1 tsp Dried Thyme
  • 100 g Cheddar grated
  • 2 Spring Onions finely chopped


  • In a pot, lightly fry the leeks in olive oil until leeks are soft
  • Add frozen broccoli, water and thyme and bring to the boil, simmer until broccoli has soften
  • Using a hand blender, puree soup until smooth
  • Add cheese and stir until cheese is mixed in
  • Add spring onions just before serving
  • Garnish with grated cheese and finely chopped spring onion
